Nestled in the central western part of the country, the Ermera municipality enjoys the ideal altitude (1,200–1,600 meters) and temperate climate that Arabica coffee thrives in. The terrain is dramatic and challenging—village plots cling to sharp slopes, accessible only by foot. Here, coffee is grown using the centuries-old "rai ubun" system, a model of traditional agroforestry. The coffee trees are shaded under a canopy of native Albizia, sandalwood, and fruit trees, interspersed with food crops like bananas, taro, and vanilla. This method creates a self-sustaining ecosystem, nourishing the soil, conserving water, and providing natural pest control. Crucially, it also makes 95% of Ermera’s coffee organically certified by default—a testament to a way of farming that is both traditional and forward-thinking.

Founded in the wake of the nation’s struggle for independence, the CCT transformed Ermera’s fragmented farms into a unified force. It provides critical infrastructure: centralized wet mills (washing stations) in key areas like Letefoho and Gleno, training in selective harvesting, and access to the global specialty market. For a farmer in a remote Ermera village, the cooperative is the vital link that turns a sack of cherries into a reliable income, funds community health clinics, and supports education.
Coffee from Ermera is known for its reliability and classic Timorese character. It is the cornerstone upon which the country’s coffee reputation is built.
